Window Fishing - Kvass Inspired Rye Saison brewed in Collaboration with Jeff & Judes - Bottle Conditioned with Jeff & Judes Sourdough Starter
Window Fishing is a collaboration with our friends at Jeff & Judes that is inspired by the Kvass tradition of making a fermented beverage out of day-old bread. We 10 loaves of their beautiful marble rye to a mash reinforced with malted and caramel rye. The resulting beer is lovely liquid bread with notes of dates, figs, Dr. Pepper, fruit leather, and hints of caraway and cocoa with a dry and invitingly bitter finish.
To further our goal of incorporating what is unique and emblematic of our collaboration partner we grew up yeast and bacteria from the sourdough starter Jeff & Judes uses to ferment and leaven the marble rye. We added this yeast and bacteria (along with some of our favorite brett strains) to half of the bottles at packaging.
