Saison conditioned on White Itachi Cucumbers *Only 36 Bottles packaged*
This saison is a collaboration with our friends at Daisies and Frillman Farms. Joe, the owner and chef of Daisies here in Chicago, and Tim, the owner and farmer at Frillman farms in Indiana, are brothers who grew up with the dream of owning a restaurant and farm respectively and working together to highlight the beautiful bounty of Midwestern agriculture.
We got beautiful Itachi White Cucumbers from Tim’s farm and conditioned Will Be on them for an extended period of time along with our house blend of brettanomyces. The resulting beer is crips and refreshing with distinct notes of cucumber, lime zest, pineapple, lemon balm, and watermelon rind.
We only bottled 36 bottles of this beer and those bottles will only be available on our website. The rest of the beer was kegged and is available exclusively at Daisies.
