Rot Rustical bottle conditioned with Brettanomyces - Double Decocted Red Saison collab w/ Goldfinger
Rot Rustical is a true collaboration with our friends at Goldfinger. It was inspired by the fiery-red ‘Rotbier’ lagers of Bavaria. All of this wort was brewed at Goldfinger and was decocted twice, as is tradition for German lager. Goldfinger fermented half of the wort at their brewery with their house lager yeast but we drove half back to our brewery where we pitched our saison yeast, let it ferment hot, then cold conditioned it for an extended period of time. The resulting beer has unique notes of raisins, walnuts, freshly steeped black tea, dried cherries, toffee, gumballs, and dried elderflower.
This version was bottle conditioned with our house blend of brettanomyces.
