Le Petit Épeautre Le Petit Épeautre - Dry Hopped Einkorn Saison bottle conditioned w/ Brettanomyces - Collaboration w/ Sundial Brewing & Blending - 5.2% ABV
Le Petit Épeautre, our collaboration with Sundial Brewing & Blending, comes out of our mutual admiration for saisons that exist in two worlds at the same time - paying respect to the earthy, funky, artisanal roots of the style while being aware of modern advancements in hop flavors and modern palettes. It is constructed with pilsner malt from Sugar Creek and unmalted einkorn from Janie's Mill. Einkorn is ancient grain and wild species of wheat. It is one of the earliest cultivated grains that sustained humans in the Fertile crescent. It is significanly earthier and nuttier than modern wheat. In France, it is know as 'Little Spelt', or Le Petit Épeautre, because of its visual (albeit small) similarities to Spelt.
After hot fermentation with our house saison yeast we added a small but impactful dry hop charge of Grungeist hops. The resulting beer has complex and contrasting notes of peach pits, wet leaves, light nuttiness, cotton candy, dried strawberries, and earthy, grassy overtones.
This version was bottle conditioned with our house blend of brettanomyces.
