Le Bizon is a collaboration with our friends at Goldfinger and an homage to the flavors of Poland. It was hopped with Polish varieties Izabella and Oktawia and whirlpooled with dried bison grass for aromas and flavors of vanilla, baking spices, honeydew, fresh cucumber, dried lime, and white pepper with a well structured and lightly acidic finish. A great pairing for dense rye bread covered in butter and pickled herring, or chased with a pickled cucumber.

This version was bottle conditioned with our house blend of brettanomyces which will result in more depth and complexity as it ages.
